I enjoy most most types of climbing, but I guess my favorite is probably technical winter/alpine routes though, as many pitches as possible.

Hmmm... lots to choose from.
Maybe, toping out on Tower Ridge in the winter in the dark without a headtorch (don't ask), or perhaps climbing perfect granite at altitude in the Ecrin, or making fresh trails to the summit after storms in Switzerland.
Cruising easy multi pitch rock routes in Wales and Scotland in the sun is always great, as is taking big flyers of crag routes that are too hard for me.
Or perhaps just sitting on the top.
