Would there be a way to use a series of knots (possibly slip knots) in a regular sling and use in a quickdraw, in order to create the effect of a ripstop, i.e. some forces would be dissipated as each slip knot pops out, in the same way that force is dissipated with ripstop seams popping away when loaded.

Just buy a couple of screamers.

Yes - both Petzl and Yates (and others) make these. They are long slings folded over and sewn down the center. The stitching rips at a set load so that the overall force of the fall is spread over a longer period. They're normally called "rippers" or "screamers" - however they are not reusable which i think is what you're talking about.

I made one from a few different dia loops of 2mm cord all backed up by a sling. I drop tested it at the wall and it sort of worked. Just buy one unless you enjoy making stuff more than using it.
