Topic - Food/drink for running 1-4 hrs?

I'm currently running up to an hour offroad and I don't normally bother carrying any food - although in the Summer I would take a small amount of water.
My goal for this year is to slowly build up my distances until I can run for 4 hours or so. What do you drink and eat when on runs of that sort of distance? Favourite products? Gels? Carbohydrate drinks? Snack sized mars bars?! How much water per hour would you expect to consume?
