Syllables, Dipthongs and Metre in Poetry

Quick question.. ..are words like:
deer, fear, vial, hues, riot, coin

considered as one syllable or two from the point of view of poetic metre?

I'm here... The only thing I know about dipthongs is that I climbed a route of that name in Ireland and that it's a Yorkshire term for a bathing garment.

Hmm, would it depend on regional pronunciation?

As an example, "Oop north"...

deer is pronounced dee-ah (two syllables)

fear is pronounced fee-ah (two syllables)

I'm sure someone who knows about such things will soon be along to enlighten us.

On "Ohm, Sweet Ohm", Kraftwerk almost make "Ohm" sound like THREE syllables!

Is it? The way I speak "deer" is "dee-err"? So I feel a disruption in rhythm when use it as a single syllable in a poem.

Yes..this is how I say it and how it sounds in my head. If grammatically it is regarded as a single syllable, would you consider it rhythmically / in terms of metre, as 2 though for the purpose of poetry?

Not sure whether different from point of view of poetic metre, but from linguistic viewpoint:

deer, fear, hues, coin all one syllable; vowel sounds diphthong apart from hues which is a single vowel sound.

vial and riot both two syllables consisting of two vowel sounds - diphthong followed by monophthong (sometimes called triphthong)

Would be easier to illustrate with phonemic chart. Sheesh, the crap I know ...
