Where is best for a climbing holiday?

I'm looking into a climbing holiday and would appreciate some advice.

Looking for sport climbing, both single and multi pitch. Want an area with good climbs in the 4's and 5's. Would also be great to be near some water for other activities, either sea or rivers.

Any advice??
