What diameter cord works best for a prussik on 5mm accessory cord?

You don't put a purssick on a tagline - you put it on the main rope the tag line is attached to.

Just search YouTube for arborist split tail then use the knot there. It uses the same diameter of cord as the main line (or tagline in your case)

To get a good compromise between holding power and ease of release you would normally make the prusik loop from smaller diameter cord. However I find 3mm cord a bit fiddly, and would go for same diameter, adding a carabiner or increasing the number of turns to improve grip.
