Most of my outdoor climbing has been in the Peak District (Stanage, Froggat etc) but having found myself in Scotland I was wondering what locations/crags people might recommend for low/mid grade routes around Perthshire, Fife, Stirling, Edinburgh & East Lothian?

Aberdour is probably the nicest

Traprain Law Pleasant slabby stuff, very polished in places, VDiff - HVS
North Berwick Law Handful of sport routes F5+ - F7something (don't bother with the trad stuff, it's rubbish)
Ratho Quarry Next to the EICC. Best for HVS upwards. Some sport routes too.
Hawkcraig a.k.a Aberdour. Great little sea cliff, check the tides! VD - HVS
Rosyth Quarry Very scruffy, but a few decent routs at VS/HVS
Limekilns Short steep limestone, VS upwards
Auchinstarry Quarry Another scruffy quarry, but some good climbing in the VS-E1 range
Cambusbarron West Quarry (aka Fourth Quarry) Also a bit scruffy, some good routes at HVS - E1
Loudoun Hill A bit out of the area, but worth a visit for S - E1
Polney Crag (Craig a Barns) Decent selection at VD - VS, and a few harder things. Beware the descents!
Benny Beg Easy sport F3 - F6a
Rockdust A few good sport routes in the F5+ to F6b range
Weem Crags Also a few good sport routes in the F5+ to F6b range
Kirrie Hill Good selection of easy/mid grade sport

Depending where you are based, Northumberland is easy enough to get to for a day,
especially Bowden Doors Kyloe Crag (Kyloe Out) and Berryhill

Ah, yes forgot about Ben A'an. The 4/5 pitch HS link-up is good fun.
