As per the title, looking for somewhere like Tonsai or Kalymnos in South America. Somewhere where I can rock-up with a harness, shoes and some basic gear and meet climbers.
Bonus points if it's near somewhere surfable!

Not sure youl'll find sport climbing and surfing nearby. But Peru has the Huaraz area for sport climbing (and alpine in Costa Blanca) and surfing in far north at Mancora.

Great trekking a day from Huaraz too - Cordillera Huayhuash.

Wish I could get that way each time we go to Peru but my wife's family are in Cusco. There's some sport in the surrounding area and a great bouldering wall in Cusco.

Not quite south but more like central, Potrero Chico, Mexico.
Or the Monteray area in general.
coast is drivable from there, Baja surf trip?

The climbing is adventurous sport climbing with some of the oddest bolting I've ever witnessed, think chockstones bolted to the main wall to create belay ledges!?!

I'm struggling to think of many turn up and climb places: Hatun Machay in Peru maybe, and you have surfing some hours away up north. Frey in Argentina, not sure there's any surfing nearby. Cipo in Brasil, but might be difficult to just turn up and find partners.
