vocational jobs

Should they be underpaid, undervalued and taken for granted just because the people want to do them in the 1st place (think outdoor instructor, nurse, teacher, policeman...)?
Also, I'm thinking that becoming a careerist is a vocation of sorts too. The only difference might be the length of time one is expected to manage it for? Thus, should all vocational jobs be encouraged to take a year off (and work in another field) once in a while? This thread comes directly from the other thread on depressing surveys about teachers that is now a bit too theoretical for me.
Just pondering.

Difficult to say how jobs "should" be paid but in reality I suspect most jobs get paid just enough to fill the vacancies with suitably qulified and/or competant people. Basically market forces dictate salaries, even in the public sector. Tube drivers are however a notable exception
