Quite a few ethereal female voices, but I can't think of too many male singers, if any.

Surely there have to be some?

I reckon Brendon from Dead Can Dance has an amazing voice....most people go on about Lisa Gerrard of the duo (who does have an amazing voice) but having seen them live a couple of years ago the quality of Brendon's voice was the one that surprised me most.

Mellow and ethereal are quite different things, although they do overlap (Solid Air). Jon Anderson is hardly mellow but is obviously ethereal, Cohen/Waits not my idea of ethereal. This is what, mellow or ethereal? Both?
