I'm looking for campsites/guesthouses that offer the opportunity to work of any kind in exchange for accommodation around the world.

A lot of youth hostels do this. In some parts of the world this is quite informal. With YHA in England and Wales you do have to register as a volunteer. Let me know if you would like any more information about this kind of opportunity in Pembrokeshire. A great area if you are a climber or surfer.

If you haven't already check put workaway.info and help-x.com. both essentially the same thing. Workaway is more popular in Europe and helpx more in Asia/nz I found.
You can browse all the listings for free and then pay a yearly cost of around £25 for contact details if you find something. I used helpx for a year in many different places in nz and was great! Also used workaway to find a hostel in Iceland where me and friend stayed for 5 months, just doing 4 hours work then splitboarding the rest of the time. Also amazing!
