Might be a bit of a male-spectrummy thing, but there's a number of items I can never have too many of, and indeed, gain comfort in buying more of:
Gloves & hats
Penknives & multi-tools
Camping stoves and associated paraphernalia
Watches
Bicycles
Bicycle lights, pumps, locks...

Rechargable batteries - I have 2 small kids and most of their toys seem to require a steady supply of AA/AAA/button cells. And that's quite apart from all my bike lights and so on.

You can never cook too may Roast Potatoes!
Seriously, if you are cooking a roast dinner, all of the potatoes will get eaten no matter how many you do, and despite reminding her pretty much every time I go back home, my Mum still seems to forget this rule.

Gloves is another good one, I seem to be constantly losing single gloves and have an entire Drawer full of odd gloves.

Micro-usb cables is another biggie for me.
