I got charged last year, after a trip to Spain for an extra day. I assumed I had got the dates wrong when I booked it but now I’m not so sure.

Hired a car last week and with the usual questions about upgraded car, insurance, sat nav etc he said returning on Saturday.
I said “Saturday?” then he said “Sunday”. This seemed odd.

Has anyone else unexpectedly been charged an extra day or am I just being paranoid?

It's happened to me before - slow response from the car hire company elicited a complaint to my CC company contesting the bill.  This caused an immediate fix by the car hire company. I wouldn't be surprised if this was quite a common scam.
