If you are an enochlophobe, then agaoid July and August. June and September are cooler, often with more stable weather and far fewer people. The Cicerone press guide has been recently rewritten by James Rushforth, excellent book, great maps and pocket sized. Rockfax Dolomites also by James is a really good overview. If you really want to avoid the crowds, go further south but you'd most likely have to read an italian guide for that.
Maps, Tabaco maps over Kompass all day long. Far closer to OS than the Kompass maps which are like a blinking tube map... You can get free maps on My Trails app if you select the right map set.
Routes, well there are so many but my favorite currently is the VF delle Trincee which you can do from either Val Pettorina or from Arabba. As I say though the area around Civetta and Moiazza are really worth checking out as the mountains are if possible even more impressive than in the standard Corvara Cortina area. Big, hairy, and very very scary
