Can anyone recommend guide books for very easy walks in the Dolimites and/or Karwendelgebirge for an old man.

Cicerone "Shorter Walks in the Dolomites" has all sorts. Cheap too.

Bad Kohlgrub - Oberammergau is a nice outing, and easy if you get the cablecar up to take the sting out of the ascent from the valley at Bad Kohlgrub.  I've done it in both directions, it's nice in winter with snowshoes. 4 nice little summits to bag. Good simple food at the Hoernle hutte.

  Mittenwalder Hohenweg is also good (cablecar up then easy VF along a ridge), but a real kneeburner if you walk all the way down via the Brunnstein hut. If you get the cablecar up and do the Hohenweg to the little lunch hut and back you avoid that mega descent. When are you going?
