That was going to be my suggestion!
Upper Lathkill Dale and the top end of Dovedale (away from the crowds) are great.
How far do you want to walk?
You can do a 22mile circuit of the Dove and Manifold from Tissington or Ilam. I'm less fond of the Manifold as its partially dry in summer, but there is Thor's cave as suggested.
