that said, tying an alpine butterfly single handed is rather satisfying.

I use them when I want a loop that might be loaded and so could be hard to untie.  I use the "hand method" described in the video.  Takes slightly longer than an overhand knot, but the time is negligible either way, so using one at every belay wouldn't be a problem at all.

Lots of knots can be tied in easier ways than are usually taught.

Fig-8, clove hitch and italian hitch can all be tied by simple twisting operations. Clove hitch to a krab is simply twist-clip-twist-clip, done one handed between finger and thumb. Italian hitch to a krab is clip-twist-clip. None of that madness about forming two loops, then trying to remember which goes under, and which goes over...
