Veggie Christmas dinner

Coming up to my first christmas as a Veggie. very happy to be missing out of the dry bland bird and dodgy gravy.

I decided that I would like a nice hot paneer and lentil curry with all the trimmings, poppadums, naan, onion bhaji's! Sounds great the Mrs GM (a meaty) isn't happy and wants me to fit in and have a nut roast, boring!

So any good curry and onion bhaji recipes most welcome?

A lot of the nice bits of Christmas Dinner (roast spuds, bread sauce, stuffing) are veggie or can be made veggie anyway. It's not that hard to find a veggie alternative to turkey and you're away.

You have the other 364 days of the year to eat veggie curry.

Normal Xmas dinner with lentil loaf and nut roast. Very nice for the vegis.

wot u need is chutney - 2yrs ago I made a large batch of christmas chutney; the festive touch is done with the addition of citrus zest. Its bound to work also directly with a curry - think of those spicy rich ingredients which make mincemeat and Xmas pudding , then add a few into the curry

When you look at a standard Christmas dinner, the meat is normally the list interesting thing.

Mushroom Wellington out of Cranks Bible - a but of a faff to make but much nicer than nut roast.

And braised red cabbage.

Onion, ginger, garlic into a blender with a little water.

Fry this mix in an obscene amount of ghee with black mustard seeds, tandoori spice mix and chilli (sounds odd frying a liquid, but trust me!)

Add potatoes diced to about 1.5cm and continue to fry until liquid begins to coat the potatoes.

Transfer to a couple of large baking sheets and place in hot oven.

Turn regularly and apply more ghee as necessary.

A little labour intensive, but worth it!
