Veggie christmas food.

We have a vegetarian over for xmas this year, and I am looking for inspiration for things to cook. I know lots of veggie recipies, but they are all day to day fare rather than xmas fodder - not sure that "Daves veggie curry #14" would be suitable.

Any suggestions for rich "christmassy" vegetarian meals that can be prepared by fairly inept cook?

Roast chestnuts shell them then stir in some double cream and heat through.

Maybe add a splash of wine.

In reply to davidbeynon: I can't find it online but I make a roast wrapped in flaky pastry , with roast nuts, leeks, herbs and a few other things . It's easy but lots of faf , which is why I only make it at Xmas. It makes v veggy Christmas dinner (slices of this with everything else and veggy gravy ) a treat for non meat eaters. If you think you (or anybody else for that matter) have the time/patience I will email a scan of the very tattered page torn from a magazine by my very patient mother many years ago.

Many years ago, I picked up a mushroom Stilton chestnut pie recipe from a bbc good food mag. I think this is the recipe here 1995 sounds about right

Use a short crust lid, rather than the puff pastry suggested here

I don't see the problem with Dave's curry, with all the trimmings, onion bhaji, bombay spuds, naan and poppadums!

Sounds amazing, implant the idea of christmas curry, once in his head nothing else will do

My favourite Xmas dinner in my 32 years of being a vege was the egg beans and chips I cooked myself when having Xmas dinner at my parents house. If you'd ever tried my mother's cooking, you'd understand why.

My lovely wife, who is a wonderful cook, used to make me things like this;

It's a stuffed portobello mushroom, with four cheeses, walnuts, exotic mushrooms, pistachios, herbs. (No recipe, it was made off the top of her head.)

One Xmas we had this:

Individual pumpkin and mushroom Wellingtons (v)
Sashimi Oysters
Savoury bread scrolls with cranberry, caramelised onion, blue cheese. (v)
Chicken drumsticks in plum marinade
Chicken drumsticks in curry marinade
Herby breaded lamb chops
Parmesan fritattas with asparagus and corn. (v)
Quorn in plum sauce. (v)
Broadbean salad. (v)
Individual mushroom tarte tartin (v)
Blue cheese and walnut pate (v)
Lentil dahl pate. (v)
7 Aussie cheeses with water crackers. (v)
Lemon curd and rasperry tartlets (v)
Fruit mince creme brulee cups. (v) (
Homemade double chocolate fudge. (v)
Chocolate flourless cake. (v)
Apricot balls
Various crackers and chips.

I wouldn't be surprised at all mate. Though I must say that in the 2 years I've been eating fish, I've not been tempted to eat red or white meat flesh.

I broke my 32 years of being vege at "The Fat Duck", god what an experience that was!! (They concocted a special "piscatarian" menu for me!!)

I'm putting muscle on so much easier since I converted, which has been an eye opener to say the least.
