I saw someone demonstrate how to make a locking pulley using only two snapgates. I can't find it anywhere online and have totally forgotten how it was done, anyone care to enlighten me?

It had no mechanical advantage and the idea seemed to be that you could use it to haul up light bags and safeguard them against being dropped.

I believe you may be on about an alpine clutch?

A quick Google search will bring up images.

It does indeed sound like an Alpine Clutch. They can be used as an autoblock in a hauling system but the relative diameters of the krabs and the rope is quite critical and the reason snapgates tend to work best is that the barrels of the screwgates prevent them from pinching the rope adequately when trying to lock. Handy thing to have in your box of tricks.
