New Year Climbing

Hi,
I'm trying to decide where to go climbing for New Year. We've been to the Costa Blanca for the last few years and love it, but are now thinking it is time to try somewhere new. We've done lots of sport and trad-both multi-pitch and single pitch, and would like to go somewhere with a wide range of both if possible. We climb up to HVS trad/6b sport so has to have a good range of routes up to this sort of grade. We've thought of Mallorca or El Chorro, but not sure how good the easy climbing / weather is compared to the Costa Blanca. Open to anywhere in Europe really though. Any thoughts?

The weather in Sicily can be pretty good at New Year, a few years ago we were climbing tops off at 9am and had to find shade at 12.

Look at the picture of this route, taken on 4th Jan. Second Sight (6b+)
There are a huge number of routes up to 6b and some long trad/support adventures to be had.
