Scottish Winter Climbs by the SMC is probably what you're after. It's the select winter climbing guidebook for Scotland and offers stuff at all grades.

There might be a book out there exclusively for lower grade routes, but if there is I don't know about it.

A bit big for a guidebook, but "Scotland's Winter Mountains with One Axe" could be worth checking out.

Scotland's winter mountains with one axe is also worth a look if you want a glossy coffee table guide. It's a great companion to the SMC guide

I hadn't heard of that "...One Axe" guide, but it looks quite good from the contents.

Dan Bailey probably won't blow his own trumpet, but his "Scotland's Mountain Ridges" book has a few of the lower grade winter classics among a host of summer trips.  There is probably overlap with that other newer One Axe book tho.

Other than that you have to pick and choose the lower offerings from the more substantial guidebooks, and the "All of Scotland" guides like that above don't give you all of the lower grade stuff, because they also want to include all the VI...VIII...X stuff!  So I have the separate Cicerone Ben Nevis (and surrounds) and Cairngorm guides.  Good pictures and topos, which is what you need if you want to find the correct lower grade routes amongst the VIs and Xs

Garry Smith's book just arrived in the post today, coincidentally. My first impressions are very good; it's well-presented and a great reference for easier objectives across the Highlands. I wouldn't take it with me, but for planning a trip it seems like just the thing.
