Yankee climber here, looking for a December/January crag that's reasonably warm and close to good internet for telework. Has anyone here worked remotely from crags in Morocco, Spain, France, or Italy? El Chorro or Les Calanques, maybe? Anywhere I'm missing? 

I can't be certain about specific crags, but I've enjoyed excellent 4G internet around Tafraout in Morocco, and I think the 4G signal extends to a lot of the crags around there (phone signal is generally excellent). We got ourselves local sim cards and found the 4G internet to be better than anything we got in the UK!

I do this. I quite often get 4g at crags in spain. If not, then hspa. As long as you don't need video you'll be fine.
