These cairns are referred to as Curricks - stone shelters for shepherds - though due to the size of many of them this cannot have been their original purpose. I suspect that one or two of the larger ones are genuine curricks and the rest (there's around 50 of them) are modern cairns. They range between 50cm and 2 metres in height.
