Best way to create a map using GPS?

My parents spend a lot of time hill walking in Corfu around one area. Apparently they cannot find any detailed walking maps for the island (there are some books with walk suggestions on the island but they want to concentrate on one area). They therefore want to create their own map of the area using a GPS and upload their routes for future reference.

Their current idea is to buy a normal GPS, record their routes as they walk and store waypoints. They would then upload this to Google Earth. However, this does not help with the actual creation of a map.

Can anyone improve on this set-up? Do you think that Google Earth is the best map to overlay the routes on to? Is there software that can use GPS data to start to draw a map of an area with an ability for users to add detail?

Any ideas or suggestions gratefully received.

openstreetmap.org has some paths recorded around the North East of Corfu, you could register an account and contribute to that project.
