Anyone cycled there?

Going there for a wedding and am allowed to ride every day😀

Do I take a carbon road bike with 25mm tyres or a steel cross bike with 35mm s marathon tyres on?

Are the roads any good?

Will be based around Belforte and Radicondoli

Don't know the exact area you'll be in but can say that I have loved riding in Tuscany. Generally great roads, lots of other riders, good climbs and great coffee stops!
I rode my carbon road bike with 23mm tyres, no problem

You may well end up sharing the roads with a pro team or two; quite a few of them based in Lucca. No shortage of hills, so skinny carbon. Lovely roads in the main, but the hill roads are variable as you might expect. Enjoy.
