Don't know the exact area you'll be in but can say that I have loved riding in Tuscany. Generally great roads, lots of other riders, good climbs and great coffee stops!
I rode my carbon road bike with 23mm tyres, no problem
You may well end up sharing the roads with a pro team or two; quite a few of them based in Lucca. No shortage of hills, so skinny carbon. Lovely roads in the main, but the hill roads are variable as you might expect. Enjoy.
