 Topic - Photoshop Help Please

I'm trying to erase someone from the background of a portrait using PS Elements 8 clone stamp tool. Does anyone know how to do it with the sample patch tracking the bit I'm rubbing-out? I want to just select a background colour and use that to overlay all the bits I'm erasing.
