Right. I've got 21 gallons bubbling away: blackberry, damson, elderberry........and combos of all 3. Early tastings are blackberry is delicious, but elderberry and damson might just trump it. The neat elderberry and neat damson are OK, but was thinking of blending when it comes to final racking/bottling. Anyone got any experience/tips in blending home made wines?

Blended hawthorn and dandelion. After drinking two bottles, one is said to be "hedged".

elderberry on its own makes a nice port type wine if left for over 3 years, otherwise its nicer blended perhaps with the damsons. Ive made a blend of cranberry blackberry and elderberry in equal parts.

Its hard to guess the final flavour of the wine untill all the sugar has gone as some fruit taste quite odd when they arent sweet. Be patient, then have fun one evening blending a glass full at a time, preferably with a friend for comparison of flavours.
