Don't know much about vege eating in Cardiff but here is pretty good from what I remember:
Crumbs in Morgan Arcade - Salads, soups, potato stuff etc

The Goat Major/The Pen and Wig/Rummer Tavern - Beer

Probably a bit late, but the Vegetarian Food Studio is great.

No idea why those pubs are listed when there are other better pubs. Not that they're awful, but the City Arms and Urban Taphouse are miles better.
