Climbing Wall Work Visa for EU national

I have an Italian friend who runs his own business in Italy as a climbing and Via Ferrata guide/instructor under the Italian system. He's a very good climber and great with groups. He wants to come to the UK for the winter to improve his English and maybe work at a climbing wall for 3-6 months. I told him it's difficult because of Brexit and to try Ireland,  but looking at the immigration rules I'm not sure I've advised him correctly. What's the current situation for people like him please?

No good employer will take him on unless he has a proper right to work in the U.K.He needs to be able to,prove he has that right  

The alternative is cash in hand, and I doubt any climbing wall does that as it’s deliberately difficult to do.

Get him to be a student on some course might be a way round it.A short term English course at a college might be best bet..
