I can't see it on some major ebook sites..any ideas?

I sort of want to get stuck into frenchness; contrary, logical (in their particular way!) and needlessly complex & prescriptive..it'd be interesting to contrast the 'complex', classical stuff with the simple...and the history. Foie gras is technically offal, after all
Have you actually browsed a copy? It's more reference than recipe. You can look up a french cheese and see where it's made. You can look up pheasant and see some named dishes.
If you want a classic french cooking course then Elizabeth David's book is de rigueur (if you'll pardon the pun).
