Do the two handed catches (x2 yellow and x1 black) and following moves count as paddle moves as it looks like he could have stopped on those!?

Hmm.. you might be right.  I don't know the rules, or whether there are rules.  (I think the "world record" thing is pretty obviously just a bit of fluff.)

Perhaps it doesn't matter that he probably could have stopped, only that he didn't.
