The most popular/famous destination in northern Greece is Meteora, climbing on conglomerate towers in stunning settings. Many of the routes are quite scary (trad or very spaced bolting) but there are certainly enough decently bolted routes for a visit of a few days. Aris Theodoropoulos' Best of Greece guide focuses on the safer-feeling classics in the area. It's an amazing place to climb.
Meteora can be combined with Pyli and Mouzaki (also in Aris' guide) for a more typical bolt-clipping experience, though the grades are pretty tough.
There are also quite a lot of crags around Thessaloniki. These aren't covered in Aris' guide, but a bit of internet searching should throw up some topos. The only one of these we've visited was Serres, which was a convenient stop-off for our drive back through Bulgaria. It was certainly not a destination crag, but some of the others sound more promising.
When choosing crags and/or routes, do be aware that Kalymnos grades are not typical of most of the rest of Greece. Expect to get sandbagged!
