Apart from the obvious Arico Gorge for probably the best spread of sports grades you are looking for, the Roques de Garcia in the Tiede National park has some amazing lower grade part trad/sport climbs. The multi-pitch "Via Normal" on La Catedral at about 4/Severe is particularly excellent and if interested you can view a short film of my buddy and I last December in this amazing place.
