I'm no hillwalker but have used my 1 person Hubba NX for a lot of bike touring down to about minus 5 degrees C (though I was cold at this temp, but that's as much to do with my sleeping bag!). Works well for me, I like the fact that I can sit up in it and has enough porch space for panniers/other bags and you'd probably get a reasonable size backpack in there. You're right that it can be a bit draughty though, with all that mesh.
Don't trust it when the wind is up unfortunately. Not many guy points.
I take an Akto when weather is likely but not a huge fan of that either, found it flappy and noisy. Not used it much so maybe better pitching would help.
