January & February hiking destinations

Looking for some inspiration. I'm taking all of my holidays next year in Jan & Feb, as I normally do, but having done this for many years I'm starting to run out of ideas. Over the past 2 decades I've visited some of the Middle East (Oman, Israel, Jordan), Morocco, Chile & Argentina, South Africa and the Southern US states. I also visited Australia and NZ many years ago so would prefer not to go back. 

Ideal temps would be 16-25. Multi day walks preferred. Perfect scenario would be Nepal type accommodation with January Omani weather, Italian coffee shops and South American vistas. Hostels, B&B or hotels preferred.

I've been looking at the Pekoe Trail in Sri Lanka and a coast to cost walk in Costa Rica but jungles don't really appeal. I walked the Maclehose Trail in HK a few years ago and that was great in Jan but quite short. 

I've got a large world map on the wall but nothing is jumping out. Any thoughts?

Tasmania? There aren't many coffee shops on the Overland Trail though. I've done it twice but it was a while ago and it might be a lot busier now. There are lots of good side trips along the way to various peaks (including Mt Ossa, the highest) and there is also an interesting trip to Pine Valley with the Acropolis and Mt Geryon.

I forgot to add you can also take a dip in the River Mersey (which as a Liverpudlian was quite a novelty).
