I actually like this photo more than your other pic Simon. The format is different, and the Milky Way forms a tremendous arch across the night sky.

11 vertical images, then stitched - I used Microsoft
Image Composite Editor. I tried using photoshop stitch, but it failed.
Then used a light “brush” to bring out the milkyway, and adjusted white balance to 4300k, then reduced noise. That’s pretty much it.
You need to have a decent overlap on each frame- I try for 40-50%
I’d suggest practicing in daylight.
