As it's difficult to find something in my language or even in English....

I can buy a flight to Torino and return from Milano at the above dates . Taking under consideration snow conditions and an shoulder season accommodation, can anyone recommend me any hiking areas/places/ routes between 5-8 hours please? Perhaps if not Aosta Valley maybe Orobie or something else?

Snow levels will be somewhere around 2700m still so that will put some limitations on what's possible.  As a suggestion, look at the Gressoney valley.  There are endless, splendid paths, although all the side valleys from the main Aosta valley will have options.  Huts will be shut but most have winter rooms.  Expedia and similar will through up plenty of options for accommodation at lower levels.
