The Turda gorge is not too far from Cluj and offers plenty of sport climbing in the grades you mention. It's very popular tourist spot, so not particularly quiet, but will have the advantage of shade, which is likely to be welcome in late May.
Rimetea is a very beautiful, and less busy site, with slab climbing again in your grade range, and a lovely, Hungarian-style village at the base. However, it is quite exposed to the sun, so you might find it quite hot at this time of year.
Not sure what type of accommodation you're looking for, but if you're considering camping, we can highly recommend the Oude Walnoot, run by a very welcoming couple. The following link is from a motorhome site, but I’m pretty sure they accept tent campers too. https://www.campercontact.com/en/romania/transsylvanie/mihai-viteazu/53075/...
